Yam/Sweet Potato Pudding

4 yams or sweet potatoes
2 cups 2% milk
1/2 cup brown sugar (plus extra 2 tbsp for sprinkling on top, optional)
4 eggs
1 tsp cinnamon
1/4 tsp salt
1/4 cup walnuts (preferably candied)

Stab potatoes with a fork, several times each. Bake in an oven heated to 350˚ for about 40 minutes, or until soft all the way through. Combine in blender or food processor with milk until completely smooth. Add sugar, eggs, cinnamon, and salt, and blend for another minute or so. Pour into a square 9x9 pan or round cake pan. Bake for about 20 minutes. Sprinkle walnuts and about 2 tbsp sugar over the top. Bake another 20 minutes, or until pudding is firm, and sugar is bubbling
